Flour is ground from grain. All grains are composed of three parts:
- bran (the hard outer layer)
- germ (the reproductive component)
- endosperm (the soft inner core).
All three parts are ground together to make whole wheat flour. To make white flour, the bran and the germ must be removed. Since bran and germ contain much of the nutrients in grain, the white flour is often “enriched” with vitamins and minerals. Some white flour has also been fortified with fiber and calcium.
What nutrients and substances are in the bran, germ, and endosperm?
The bran is the coarse outer layer of the grain. It contains about 50% to 80% of the minerals in grains, including iron, copper, zinc, and magnesium, as well as fibre, B vitamins, phytonutrients, and other bioactive components. The endosperm is the middle layer, comprising about 85% of a whole grain by weight. It contains mostly carbohydrates, along with small amounts of B vitamins. The germ is the smallest of the three components.
How much gluten is in wheat germ and wheat bran?
I don’t know how much gluten they contain, but my feeling is that it is likely to be more than you would find in wheat starch and so best avoided by celiac patients. How can I get more information? What is Endosperm?
The endosperm is the food reserve on which the young plant lives until is has developed a root system. The endosperm is the part of the grain milled to make white flour.

What is the Bran?
Comprised of the pericarp which protects the grain and the inner seed coats which control the intake of water into seed. Most or all of the bran is present in wholemeal and brown flour, together with the endosperm.
What is the Germ?
The embryo of the wheat plant with a radicle which can grow into roots and plumule which can develop into stems, leaves and ears. (The germ is present in wholemeal flour and can be added to white or brown flour (10%) to make wheatgerm flour).
What are nutrients?
Nutrients can be distinguished among weight loss products because they are extracted from food and water. They are part of our diet and the body depends on them. Some weight loss products claim to increase metabolism or correct a slow metabolism. This is not what nutrients do. Nutrients aren’t about fast or slow, they ARE metabolism. When food is digested the nutrients are mined and taken into the body.

If oatmeal contains oat bran, why isn’t oat bran listed on the label?
Old Fashioned and Quick Quaker Oats contain one ingredient: whole rolled oats. Since oat bran is a natural portion of the rolled oat, it is not technically considered a separate ingredient. To identify products containing oat bran, look not only for oat bran, but also for rolled oats and whole oat flour on the ingredient label.
What is Rice Bran?
Rice bran is the outside layer of the rice kernel, which contains the bran, and part of the rice germ. It is the part of the rice kernel that is removed to make brown rice. Some rice mills remove both bran and polish at the same time to make white rice. When polish and bran are not separated they are referred to a simply rice bran. Ener-G Foods uses rice bran that is friction heat stabilized at a low temperature of 85 degrees centigrade.

What are secondary nutrients?
Calcium, magnesium, and sulfur are referred to as secondary nutrients because they’re used in greater quantities than micro nutrients. They are commonly listed with micro nutrients on the fertilizer label.
